I substituted eggs for flaxegg then butter for coconut oil and applesauce!
These cookies are sweet and soft with a touch of buttery goodness!

2 1/2 cupsall purpose flour
1 scoop Nutrasumma Vanilla Pea Protein
1/4 cupWhite Sugar
1 tspBaking Soda
1/2 tspBaking Powder
1/2 cupSoftened Coconut Oil
1/2 cupUnsweetened Apple Sauce
1 tspVanilla Extract
1Pre-heat oven to 375*
2In a large bowl, mix together wet ingredients; flaxegg, coconut oil, vanilla & applesauce until smooth. Slowly add dry ingredients until cookie batter is smooth. Roll dough into 1.5" balls place onto lightly greased cookie sheets. I use coconut oil spray.
3Cook for 9-11 min, let them stand for 2 minutes before placing them on a wire rack to cool!
