Pumpkin Butterscotch Protein Ice Cream

This gluten, dairy and soy-free treat can be topped with peanut butter, coconut, cashews or chocolate chips. You can enjoy it as a late night snack or an afternoon pickup not to mention on a warm summer's day this is always a good treat to help cool you off.

 

  • Cook: 15 mins

Ingredients

1 scoop Nutrasumma Unflavored Pea Protein

1/2 cup pumpkin puree

1/3 cup lite coconut milk

1/2 tsp butterscotch extract

2 tbsp PB2

Stevia to taste

Directions

1Place all ingredients in a blender with ice and blend for 30 seconds. You can either eat it right away or place in the freezer for 15 mins.
