Pumpkin Bread

We know that Pumpkin-flavored everything is the hot topic right now. Upgrade your pumpkin bread this holiday to include more protein to keep you going during your long pre-Thanksgiving planning! Eat, share, enjoy, and you can even use the leftovers for Pumpkin French Toast after Thanksgiving!

  • Yields: 8 servings


1 can (420g) pumpkin puree

1/2 cup Nutrasumma Pea Protein powder (Unflavored or Vanilla)

1/4 cup coconut flour

1/4 cup coconut sugar

1/2 cup liquid egg whites or 2 eggs

1/2 tsp baking powder

1 tbsp vanilla powder

1/2 tbsp cinnamon

1/2 tbsp mixed spice


1Using a handheld blender, standing blender, or food processor, blend all of the above ingredients together.

2Pour dough into pan(s) and bake until a toothpick comes out clean (roughly 40-50 minutes depending of loaf size. Smaller ones will cook faster, and one large one will take longer). Keep checking and remove when the top is golden brown. Let cook for 8 minutes and then remove from pan, slice and serve. This keeps for several days. You can also freeze it and toast slices as needed.

Topping ideas: coconut oil, coconut butter, almond butter, maple syrup, honey, whipped cream, butter, or yogurt.
