Protein Packed Thin Mints

Do you remember growing up as a kid and always ordering Thin Mints from the Girl Scouts? It's definitely one of the more popular cookies out there and we have a great recipe to share with you on how to make gluten, dairy and soy-free protein packed thin mints.

Ingredients

3/4 cup Nutrasumma Chocolate Pea Protein powder

2 1/2 tbsp cocoa

1/2 tsp stevia, liquid

1 tsp pure peppermint extract

6 tbsp coconut oil, melted

2 tbsp unsweetened shredded coconut

Directions

1Place all ingredients into a bowl and stir together.

22. Scoop onto plate or baking pan, or into the bottom of a muffin tray, then set in freezer to set for 5-7 minutes.

33. You want the cookies to be hard to the touch.

4Keep in the refrigerator or store in the freezer.

Makes 15 small cookies
