Gluten, Dairy and Soy-Free Chocolate Chip Protein Cookies.

Yields: 24 small cookies and 12 regular cookies
1/4 cupcoconut sugar
2/3 cupBob Red Mill's Oat Flour
1/2 cupPB2 powder
1/2 tspbaking soda
1/3 cupUnsweetened Silk Cashew Milk (you can add more if it seems too dry)
2 tbsppeanut butter
5 tbspMini Chocolate Chips
1 scoopNutrasumma Vanilla Pea Protein
1Mix together all ingredients in one bowl. The dough will be very wet and sticky even when fully mixed.
2Using a tablespoon measurement, place dollops of cookie dough on cookie sheet. Use your fingers to make the dough into a more roundedshape if you want more round cookies.
3Bake at 350F for approximately 7-8 minutes. The cookies may seem a little undone to touch but they will harden as they cool. If you like a more muffin-like cookie then bake for an additional 1-2 minutes.
