Chocolate Chip Protein Cookies

Gluten, Dairy and Soy-Free Chocolate Chip Protein Cookies.

  • Yields: 24 small cookies and 12 regular cookies


1/4 cup coconut sugar

2/3 cup Bob Red Mill's Oat Flour

1/2 cup PB2 powder

1/2 tsp baking soda

1/3 cup Unsweetened Silk Cashew Milk (you can add more if it seems too dry)

2 tbsp peanut butter

5 tbsp Mini Chocolate Chips

1 scoop Nutrasumma Vanilla Pea Protein


1Mix together all ingredients in one bowl. The dough will be very wet and sticky even when fully mixed.

2Using a tablespoon measurement, place dollops of cookie dough on cookie sheet. Use your fingers to make the dough into a more roundedshape if you want more round cookies.

3Bake at 350F for approximately 7-8 minutes. The cookies may seem a little undone to touch but they will harden as they cool. If you like a more muffin-like cookie then bake for an additional 1-2 minutes.
