Banana Bread Cookie Dough and Easy Gluten-Free Protein Cookies

Ingredients

1 Banana, raw, medium 7" to 8" long (118g)

1 tbsp Coconut oil, virgin (14g)

4 Dates, medjool, pitted & chopped (24g)

1 scoop Nutrasumma fermented pea protein, plain (25.6g)

1 tsp Cinnamon, ground (2g)

Directions

1Mash banana in a mixing bowl with a fork.

2Mix in coconut oil (warm coconut oil till soft or liquid).

3Mix in chopped dates, pea protein and cinnamon or Combine all ingredients in a food processor.

4Work til uniform in color.

5Uneaten portions best kept refrigerated.

6Servings: 9 1oz portions
