CRUSTLESS PUMPKIN PIE

In December's email newsletter, we asked three of our brand ambassadors to share their top 3 things from this time of year. Redd is sharing  her top 3 holiday recipes, just in perfect time for a season when it's hard to turn down food. Redd's recipes are healthy treats you don't have to feel guilty for having second helpings of.

  • Cook: 3 hrs

Ingredients

1 15 oz. Can of Pumpkin Puree

1 cup 2% evaporated milk

2 Packets unflavored gelatin

1 1/4 cup Unsweetened almond milk

1 scoop Vanilla Whey protein by Nutrasumma

1 tbsp Sugar Leaf Stevia

1/2 tsp Maple Syrup

1 tsp Cinnamon

1/4 tsp Cloves

Directions

1In a large bowl mix 2 packets of unflavored gelatin with 3 Tbsp of water.

2Let sit for 5-10 minutes or until hard.

3Bring 1C of evaporated milk to a boil.

4Slowly pour over gelatin until it’s mixed evenly.

5While stirring slowly add in unsweetened almond milk.

6Now add in remaining ingredients, mix well.

7Pour pumpkin pie mix into a greased pie pan or 9×9 pan. I used coconut oil spray.

8Let set for 3 hours or over night in the fridge.
